Carrot health drink production

Carrot is a root vegetable that is rich in carotenoids. It is commonly used to prevent, treat, or assist in the treatment of night blindness, dry eye, etc. It also has the effects of lowering blood pressure, strengthening the heart, reducing inflammation and preventing allergies. Carrot drink is a health drink. Process selection - washing - peeling - blanching - beating - pressing - color protection - centrifugal separation - deployment - homogeneous - sterilization - filling - finished products. Operational points Selection of materials: Fresh carrots with smooth surface, crisp flesh, few fibers, no mechanical damage, pests, or freezing and freezing should be used. Cleaning: Cut carrots and roots first, then rinse with water. Peeling: Soak the carrots in a 4% to 6% hot alkali solution for 1 to 2 minutes. After peeling, wash the remaining lye with water. Finally, drain the surface moisture. Boil: Put the carrots in a 100°C boiling water sandwich pot and bake for 4 to 5 minutes. Beating and pressing: The hot-burned carrots were sliced and beaten in a slicer, and 85 to 90°C hot water was added at a ratio of carrot:water=1:1.5. Then, the slurry is input into a screw press, so that nutrient components soluble in water in carrots are separated from cellulose and other substances that are insoluble in water, and juice is taken out from the waste residue, which can be repeated 2 to 3 times. Color protection: The obtained carrot juice is added to 0.03% to 0.05% ascorbic acid solution for color protection. Centrifugal separation: Centrifugal separation of the color-protected juice through a centrifuge at a speed of 6500 rpm separates some of the macroscopic particles present in the carrot juice. Formulation: Add stabilizer to carrot juice and mix syrup to season. The mixing stabilizer has the following formula: sodium alginate: agar: CMCNa=1:2:1. The mixing syrup has a ratio of 9% to 10% of sugar, 0.12% to 0.2% of citric acid, and 7% to 8% of honey. Homogenization: The prepared mixed liquid is homogenized by a homogenizer at a temperature of 50 to 60° C. and a pressure of 20 to 25 MPa. Sterilization: A high-temperature flash sterilization process is used. During sterilization, the temperature is maintained at 120 to 140°C for 3 to 5 seconds, and the juice is immediately cooled to room temperature. Aseptic filling: under aseptic conditions, filling with a filling machine, and then sealing with a sealing machine in time, is the finished product.
