Ginger heap method

Currently, there are three main methods for storing ginger: packaged storage, closed storage, and open-air storage. Each method has its own advantages and is suitable for different conditions and requirements.

(1) Packaged Storage: This method begins with careful selection of the ginger roots. Any damaged, frozen, small, or diseased pieces should be removed before storage. The selected ginger is then placed into baskets (commonly known as "lou" in Chinese), and stacked in a horse-riding shape to maximize space efficiency. The stacking height can reach up to three baskets high. During the storage period, especially after the hot season, the ginger tends to sprout. These sprouts are edible, so they can be harvested in batches and sold gradually, ensuring a continuous supply.

(2) Closed Storage: This technique is typically implemented before the onset of winter. Before starting the storage process, a thorough inspection of the ginger is necessary to remove any rotten, damp, or low-quality pieces. Only the best quality ginger is kept and stored in a warehouse. To protect against freezing, the ginger is covered with straw or similar materials. The storage area should not be too large—ideally, each warehouse holds around 10 tons of ginger. The pile is usually about 2 meters high, and several ventilation tubes made from reed are inserted to ensure proper air circulation. When removing the ginger, care must be taken to avoid leaving any gaps near the walls, while the center can be slightly looser. The ideal temperature inside the storage room is maintained between 18°C and 20°C. If the temperature drops, additional insulation can be added; if it rises too much, the covering can be reduced to allow better cooling.

Another method involves spreading the ginger on the ground and storing it around the land. This approach is particularly useful when there is limited storage space or when using natural ventilation is preferred. The process is similar to the other methods, but it takes advantage of the surrounding environment for temperature regulation.

In summary, choosing the right storage method depends on factors such as climate, available space, and the desired shelf life of the ginger. Whether using packaged, closed, or open-air storage, proper handling and environmental control are essential to maintain the quality and freshness of the ginger over time.
