The fresh mushrooms treated by the above methods can be safely stored for 14 to 20 days under the conditions of relative humidity of 80% to 85% and temperature of 1°C. When the cold-stored mushrooms are sold at a short distance, they should be stored at 20°C for 8 to 12 hours and then listed to reduce the temperature difference so as to prevent condensation on the mushrooms.
